Salt is the most used seasoning and often the deciding factor to taste. Seasoning a dish with the perfect amount of salt is indeed a difficult technique, which is why it is important to preserve salt properly to keep it in its best condition in order to reduce variables.
Having one of the six oldest kilns in Japan, Tokoname in Aichi Prefecture has been famous for its pottery since late 1100s. A storage container designed exclusively for salt was handmade in the very city. By leaving the containers unglazed, the natural texture of clay maintains the humidity level at exactly what salt needs.
Although designed for salt, this container can also be used to store sugar. However, sugar has slightly different humidity requirements, so it may be easier to see chunks of sugar in the container.
Please note that unglazed clay can hold a small amount of moisture in itself when washed. Before first use or when cleaning, please allow the container to dry completely before putting in fresh salt or sugar. Hand-wash only. Tokoname ware. Made in Japan.
